Mendoza, besides being famous for it's wine region, accounts for almost the whole production of prunes in Argentina and an average of 20 % of the World production.
Prune trees were introduced to Argentina long time ago by immigrants who came to Argentina in search of a better life, purchased land in the fertile irrigated Mendoza valleys and started planting. The prune grown here is an offshoot of ‘La Petite d’Agen’, a prune plum native of Southwest France. They are also known as the Mendoza French Prune.

Harvest time is during late summer (mid February through March). Inmediately after harvest, the prune plums are dried in gas fired dehydrators to reduce their moisture to 21 %. This is made in order to store the plums at ambient conditions withour running the risk of spoilage from yeast or mold. After receiving a customer's order the plums are re-hydrated to higher moisture levels for consumption.
Modern packaging plants and specialized staff grade and inspect the plums so they can be ready to be packed and shipped
out.

Bulk dried prunes - dried plums that have been processed and are ready for use.  Bulk prunes are typically re-hydrated (tenderized)  to consumer use levels that range from 28% to 32% moisture. Bulk prunes are available pitted or un-pitted.

The process of removing the pits from the prunes is made through the following ways:

1)Automatic large-scale machines like Ashlock or Elliot.
2) Small hand-operated machines that maintains the body of the prune largely intact and with very good shape.
3) Hand pitting. This process leaves the body of the prune largely intact and with two holes. We also manufacture one hole pitted prunes.

Sizes of the prunes: 20/30, 30/40, 40/50, 50/60, 60/70, 70/80, 80/90, 90/100, 100/110, 110/120 and over.
